Aside from grabbing a chilled glass of rosé, my favorite pairing for a hot, sunny day is this crisp and refreshing corn and arugula salad. This recipe is absolutely delicious and so easy to whip up, which is why you can find me making it all summer long!
Corn and Arugula Salad
A refreshingly balanced salad that is the perfect healthy summer dish. Made with simple ingredients, this corn and arugula salad is gluten-free, dairy-free and vegan, making it the perfect salad for everyone! This will be a recipe that you reach for again and again this season.
INGREDIENTS
- 5 ears of corn, shucked
- 5 ounces of arugula
- 1 medium red onion, diced
- 1 cup of cherry tomatoes, halved
- olive oil
- lemon juice
- lemon zest (optional)
- salt and pepper
INSTRUCTIONS
Step No. 1: Take your shucked ears of corn and carefully slice off all the kernels off the cob. A small bowl, flipped upside down and placed inside a larger bowl, makes a great base for this task.
Step No. 2: In a large serving bowl, combine the corn kernels, baby arugula, red onion and cherry tomatoes.
Step No. 3: Drizzle with olive oil and a squeeze of lemon juice (add some zest if you’re feeling fancy) and toss gently until evenly coated. Start with a small amount, you can always add more. Season with salt and pepper to taste.
Step No. 4: Refrigerate until ready to serve. Serve cold and enjoy!
